How many times a week should I perform this and how should I up the intensity to avoid the plateaus? Thank you

You could change your leverage in a lot of the exercises in order to make the exercises more difficult. Other exercises lend themselves to wearing a weighted vest while you do the movements (or ankle/wrist weights depending on the exercise). Three times a week for this routine, coupled with a workout for lower body on another 3 days a week, would be ideal.
