I love when you do the standing or sitting workouts because I have trouble with floor exercises.
Use ground flaxseed and water for your "egg". 1 Tbsp of flaxseed and 2 1/2 Tbsp of water.
Add some slivered almonds to those green beans for protein. No protein in mushrooms but they still are so very nutritious & delicious. Flax, chia & hemp seeds have protein and are easy to sprinkle on just about everything. Make sure the flax & chia are ground. Veggies have protein but not a lot.
