Loved this! This week I made a batch of butternut squash, broccoli, and cauliflower in the oven and have been adding them to the side of all my meals! It definitely makes adding veggies easier when they are already done!
I see you have hypothyroidism, have you looked into the prometabolic way of eating. Balancing carbs fat protein in every meal. Avoiding pufas(nuts , seeds, vegetable oils) , cruciferous vegetables can be harder to digest & beans grains can also be too. Some can tolerate those soaked properly

Great meal prep video! I noticed, did you cook that chicken on low pressure for 10 minutes? I always do mine on high in the IP, but sometimes I find it doesn’t shred so easy. I’m thinking if I saw that right, I’ll try low pressure, but then do you do natural release?

My dr suspects I have Hashimoto’s, already have Addison’s so I have to learn to eat better. I didn’t know the veggies had to be cooked, not raw…that explains a few things.

I haven’t watched all of your videos but the air fryer has caught my eye—seems ideal to making meal (prep) but easy…can you speak to that? I don’t have room for an instant pot and air fryer—is an air fryer more useful?
