what I will do is add the addition of toasted tortillas before laying the meat mixture so it gives a bit of a crunch and to really make it more authentic.

If you dont have fancy qounoi or however you spell it….lol….can you use brown rice instead?

Just put it in the oven. Used fresh ground chicken, fresh ear corn some salsa. I only had plain tomatoes. My sweetie won’t touch quinoa. So, I used cooked rice. Smells wonderful. Can’t wait.🤤. O.k. Just ate too much. Couldn’t put it down. Ohhhh man was that good! Plenty for lunch tomorrow. Thank you! Even Mr. I hate everything had two servings.
I have a challenge for you to make a healthy meal with no onions, bell peppers, Avocados for a very picky eater.
