They grow. Every set to failure then pause let the burn subside and then more reps. Keep doing this until you are crying and can't move the weight. Your pain tolerance builds and calves grow. Hit them 3 times a week. Get creative and up intensity and weights.
Why doesn't Omar train calves? It's not rocket science growing calves- squat and deadlift heavy a minimum of 3x in the space of 2 weeks and throw in 3 sets of calf raises after squats (and deadlifts if you do then on leg day).

I would also recommend going running, more specifically doing uphill routes and/or doing short sprints. I found that this made my calves a bit bigger and more developed and I've got a reasonably high calf insertion. Running in general does help, but doing what I mentioned above forces your muscles to do more work and in my opinion it's what the calf muscles are actually built for. Also if I recall correctly calves are more built for higher rep ranges than other muscles but I may be wrong.
