I love kombucha,but oh boy did I cringe when you grabbed the tea bags out. Please everyone never do what she does at 2:20. Kombucha is basically a bacteria/yeast fermentation breeding machine. We want it to be breeding Acetobacter xylinoides and acetobacter ketogenum. However, if your brew gets contaminated, then ANY bacteria will breed in it. You want to treat your prep as though you are in a emergency room surgery. Never touch the brew with your hands, especially not when it's cooled and the heat won't kill any contaminant. As it steeps it should be always covered to keep bacteria from floating down and landing in it. Also…

Buy a jar with a spigot 1 inch off the bottom. This is super important, because once your scoby has developed it's own cellulose cap, you never want it exposed to air again. So you drink from the bottom. Once you have 1 cup remaining, you make another brew in a pot. Once the brew is cooled you add it to the jar with the cellulose cap. Lift the cap carefully with clean and heated tongs (to prevent contamination) and then carefully pour the new sweet tea mixture in under the cap, and drop it back down. Seal it back up with a breathable dish towel and put it away to ferment.

I also don't like the recommendation to burp it. The cellulose layer cap acts as an air filter. Some air can get through it, but it's scrubbed and filtered as it passes through that membrane. Any contaminants will get trapped and locked up in the rubbery cap. If you burp this thing, you basically bypass that, and allow contaminants in. There is absolutely no reason to do this. Please don't do that.

And again, just to repeat because this is so important, please never ever ever stick your hands into the brew. No matter how clean you keep your house and your hands, they are absolutely filthy compared to the kombucha. If you contaminate it, then you will be breading who knows what bacteria, and it will breed there FOREVER. You will never be able to reset it, outside of starting from scratch again. But you won't know until you get very sick.
