My go to vegan food rn is cereal, trail mix, and i eat the morning star vegan chicken patties. You're doing better than me because I never eat salads😂. Gl on your journey!

if you really want to try to find a replacement for eggs, i’d recommend using chickpea flour to make an “omelette.” it still has a lot of protein and taste pretty good, and you can add veggies and such to fill it up. i personally struggle with eggs too lol

Tiffany Thanks for the recommendation to watch The Game Changers- very interesting. Returning that blessing with some ideas that have helped me as I am on this journey too for the past 6 weeks Right now I call myself Vegan-ish. Funny you just mentioned “Just Egg” which is made from mungbean- just bought some.
Sending this your way for ideas on food prep which has helped me as well . Been loving sweet potato toast with avocado or nut butter. I use Caulipower frozen sweet potato slices.-clean.

Sometimes my go to food is 2-3 slices of tofu (it tastes like egg whites) with some soy sauce, some tomatoes and a good whole grain bread.
For a chickpea omelette as Caitlin said, you can try Chef Jana's omelette with soaked chickpeas:
